Chicken Bacon Ranch Pasta Recipe (Dairy & Gluten Free)

I have always LOVED Chicken Bacon Ranch Pasta smothered in cheese so when my Nutritionist said I had a body full of inflammation and that I needed to eliminate Dairy and Gluten, my immediate reaction was... 

 

WTF ~ What the Fork!

 

I never thought in my lifetime that I would have to eliminate cheese from my fridge! I am not a chef but through this experience, have found I can substitute alternative ingredients like a boss. After some much needed time with Google, I recreated this top internet pick to fit a low sugar, dairy free, gluten free and egg free diet lifestyle to fit all of our food sensitivities. We love our veggies so we added broccoli too.

 

My family just LOVES it and best of all, it does not make me feel like I just ate a bowling ball like most dairy free and gluten free meals can do. 

 

Here is the recipe ~ Enjoy ~

 

A non dairy & gluten free chicken bacon ranch pasta recipe your whole family will love. Quick and easy with 7 healthy ingredients and quick prep time! You can make your own dairy & gluten free ranch with the recipe!

 

 

 

Ingredients:

 

1 lb Organic Chicken Breast

6 slices bacon, cooked and diced

2 cloves garlic, finely chopped and sauteed in olive oil​​

1 cup non dairy ranch dressing 

1/2 teaspoon pepper

1 package gluten free noodles

1/2 cup non dairy cheese  

 

If Desired 

 3 cups Broccoli cut into bite size pieces

or

 2 cups Spinach & 1 cup cherry tomatoes, halved

 

Steps:

 

1.  Spray 4 quart crock pot with cooking spray; place chicken breast in crock pot.

 

2.  In a medium bowl, mix bacon, garlic, ranch and shredded cheese. Pour on top chicken.

 

3.  Add broccoli or spinach & tomato if desired.

 

4.  Cover and cook on low for 6 hours or on high for 3 to 4 hours.

 

5.  With about 15 minutes left, prepare the Gluten Free Noodles per package directions.

 

6.  Just before serving, shred chicken breast with 2 forks and toss creamy chicken mixture with cooked noodles.

 Recipe Notes:

If you would like, you can set the bacon aside and add  to each bowl just before serving. You can add more cheese and seasoning to taste. Add more veggies like organic broccoli or spinach & cherry tomatoes to this yummy dinner. We like Live G Free Organic Brown Rice & Quinoa Penne  and Tinkyada Rice Pasta as our gluten free pasta substitutions.
